Cheesecake Cupcakes

I will have no more friends after this recipe.  I’m sorry but I had leftover sour cream so I decided to make these cupcakes.  They are so easy to make and so good to eat.

You will get 18 cupcakes.

Preheat oven to 350 degrees F.


2 eggs

½ cup sugar

½ cup melted butter

1 cup flour

1 tsp baking powder

1 tsp vanilla

Beat all ingredients together starting with the eggs and sugar.  Proceed with the butter, flour, baking powder and vanilla.

Note:  Add flour in small quantities.

Add  approx. 1 tbsp into muffin tins lined with paper.

Cheese Mixture

2 eggs

½ cup sour cream

1 tsp baking powder

1 tsp vanilla

1 x 250g cream cheese (room temperature)

½ cup sugar

Beat cream cheese.  Add eggs, sour cream and sugar.  Beat until fluffy.

Add approx. 2 tbsp to each cupcake.

Bake for 20 mins.


2 cups frozen berries

½ cup water

1 tsp sugar

1 tbsp cornstarch

1 tbsp water

Bring berries, water and sugar to a  light boil.  Dissolve cornstarch with water and add to berry mixture.  Once thickened, pour approx. 1 tbsp over cooled cupcakes.
