Note: Make sure you have a big crowd to finish it because you’ll end up eating the whole thing yourself. Lol!
½ cup butter
2 cups brown sugar
½ cup corn syrup
½ tsp salt
½ tsp baking soda
1 tsp vanilla extract
2 bags popcorn, popped and unpopped kernels discarded
1 cup peanuts, unsalted (optional)
Preheat oven to 250 degrees F. Spray two cookie sheets and two forks with no-stick cooking spray.
In a medium sauce pan, melt butter over medium heat. Add the brown sugar, corn syrup and salt. Bring to a boil stirring constantly. Boil for 2 minutes without stirring. Remove from heat and stir in baking soda and vanilla. It will foam up. Continue stirring until the baking soda is completely dissolved.
Place the popcorn on the cookie sheets in a single layer. If you are adding peanuts, add them now!
Pour caramel in a stream over popcorn. Be careful, it’s very hot!
Using the forks, stir to coat popcorn as much as possible.
Place in oven for 8 minutes. Remove from oven and stir again to coat the popcorn. Place in oven for another 5 minutes. Remove from the oven and stir for the last time. Let cool completely. Enjoy!
You can store whatever is leftover, if any, in air tight container. Lol!
