Fresh Garlic and Olive Oil Potatoes

I love potatoes.  The more ways I can eat them, the happier I get…

This is a very simple recipe my Mother-in-Law used to make for us.  I thought of sharing this recipe today because this past Tuesday would have been her 86th Birthday.

This is a low calorie and fresh tasting potato recipe.  It is quick and easy to prepare.


4 potatoes, Yukon Gold or Red, peeled


olive oil

3 garlic cloves, chopped

parsley, Italian, chopped


Boil potatoes in salted water for approximately 30 minutes or when you can easily poke a fork through it.  Drain.  Cut potatoes in ½ inch slices.  Place on a platter. Sprinkle with salt, pepper and chopped garlic.  Carefully toss the potato slices.  Try to keep the slices whole!  Add the olive oil in a slow steady stream.  Top with chopped parsley.  Serve while it is still warm. Enjoy!
