I have improved my Bolognese sauce ( meat sauce). It was very good to begin with but now it’s better!
If you look back at my previous recipe, I just replaced the minced pork with pork ribs and Italian sausage. Yum!
We are trying to cut salt from our diet. I add salt in very small quantities at different stages of cooking. I just want to enhance the flavour.
1 lb minced veal
6 pork ribs
3 Italian sausages, mild or spicy*
3 jars tomato purée
1 can diced tomatoes, puréed with a hand mixer
¼ onion, chopped
1 carrot, chopped
1 celery stalk, chopped**
1 tbsp flour
¼ cup milk
2 tsp Italiano spices (I bought it at Costco)
In a pot, sauté onion, carrot, and celery in olive oil (add enough oil to cover the bottom of your pot). Season with salt and pepper.
Add ribs and sausage. Season only the ribs with salt and pepper. Cook on medium heat until onions are golden and the meat is browned on all sides.
Remove the ribs and sausage and set aside.
Add your minced meat. Season with salt and pepper. Cook the minced meat thoroughly and once the liquid has dried up, sprinkle the flour. Mix well. Add the milk. Once the milk is absorbed, add the tomato sauces.
Put back the ribs and sausage. Add only 1 tsp of the Italiano spices. Simmer for 1 hour with the lid on. Stir every 15 minutes or as needed. Taste and add salt, pepper and the remaining Italiano spices. Simmer 30-45 minutes more with the lid off.
You’ll have enough sauce for 2 meals. Serve the ribs and sausage with a plain salad with just olive oil and balsamic vinegar. Sooo good!
*Try 2 mild and 1 spicy to give your sauce a little kick!
**When I buy celery, I chop it up and freeze it.
