Since the local farmer has closed for the season, I buy frozen vegetables. Not the same taste as fresh but they are easy to store.
Mind you, I never buy fresh broccoli anyway. I’ll need like ten heads of fresh broccoli to make that ginormous bag of frozen broccoli from Costco!!!
This recipe makes frozen vegetables so tasty. My boys can’t get enough of it…and of course, it’s really easy and quick to make!
4 cups Frozen broccoli**
Salt to taste
Pepper to taste
2 tsp Garlic powder
1 tsp Onion powder
Spray your cookie sheet with non-stick cooking spray. Spread out your frozen broccoli and *thaw completely.
Preheat oven to 425 degrees F.
Pour olive oil onto broccoli. Sprinkle on half of the seasonings. Stir to evenly coat the broccoli. Place in oven.
Ten minutes into the baking, stir and add a little more olive oil and the rest of the seasonings, if needed.
After five minutes, if the broccoli tips look burnt and crisp, remove from oven. Add a drizzle of olive oil and serve.
*If not completely thawed, baking time will vary.
**Try frozen green string beans. They have a mix at Costco with yellow string beans and carrots! It’s also very good with this recipe.
